Choosing Wholesale Matcha for Cafes, Hotels, and Restaurants

Published:

Hello from ICHIZEN. If you are choosing matcha for your business, you may be wondering whether its flavor will hold up in milk—and whether your team can prepare it consistently during a busy service. The most useful starting point is to test it in your actual menu, then look at preparation and purchasing requirements together.

What kind of cup do you want to serve?

Are you planning a refreshing matcha latte, or a more concentrated drink to accompany dessert? Defining the use first makes the comparison much clearer.

For a milk-forward latte, check whether the matcha remains distinct after mixing. If you serve matcha with water alone, pay closer attention to the balance of aroma, umami, and bitterness without other ingredients.

Your service setting matters, too. A cafe might consider takeaway time, a hotel might have different needs at breakfast and in the lounge, and a restaurant might focus on dessert pairings. The question is not simply whether a matcha is good, but whether it suits the experience you want to offer.

How does it taste and look in your milk?

Start with the same recipe

When comparing candidates, keep the quantities of matcha, water, milk, and sweetener the same. Changing the milk or sweetness between samples makes it harder to identify what the matcha itself contributes.

Compare them under the same conditions first, then adjust the recipe for each candidate. If you change everything at once, it becomes difficult to tell what caused the difference.

Look beyond the first sip

Notice the aroma after adding milk, how clearly the matcha comes through, and any lingering bitterness or astringency. Strong bitterness is not necessarily the same as a full matcha flavor.

Judge color in the finished drink, not only in the dry powder. Compare samples under the same lighting and in your serving cups. If your menu includes both hot and iced drinks, test both: the appearance your guests actually see is more useful than a photograph alone.

Can your team reproduce the result during service?

Once you like the flavor, consider the workflow. Adding matcha powder directly to milk can leave clumps, so test a method that disperses it evenly in a small amount of water before combining it with the rest of the drink.

Use the equipment your team will actually have, whether that is a bamboo whisk or an electric mixing tool. Check the texture and foam as well as the flavor.

  • Weigh the matcha and measure the liquids rather than relying on estimates.
  • Standardize water temperature, mixing order, and equipment.
  • Ask another team member to follow the recipe and compare the result.

For iced drinks, ice quantity and the time before drinking also affect the experience. Taste beyond the moment of preparation and consider how your guest will enjoy the drink over time.

If you would like a starting point for your preparation notes, see our guide to making a matcha latte, then adapt the method to your service.

Compare cost per cup, not just price per bag

A bag price alone does not tell you how a matcha will work on your menu. Different amounts may be needed to reach your preferred flavor, which changes the matcha cost per serving.

Multiply the price per gram by the grams used in one drink to calculate the matcha component. Account for milk, sweetener, and packaging separately so you can assess the complete menu item.

A larger pack is not automatically the best choice. Consider storage after opening and how quickly your business expects to use it. Measuring and preparation time are also worth weighing alongside the ingredient price.

What should you discuss with a supplier?

Explain the menu you are planning, whether you will serve hot or iced drinks, your expected usage, and your intended launch date. If demand is still uncertain, it is fine to say so.

Ask whether samples are available and under what terms, along with order quantities, pack formats, pricing, shipping costs, lead times, and storage guidance. Do not assume that samples are free or that your preferred quantity will be available immediately.

Also confirm that any quotation applies to the same product you tasted. For another cafe-focused perspective, you can read our guide to wholesale matcha for cafes.

Considering ICHIZEN for your menu?

ICHIZEN is a matcha brand from Uji, Kyoto. Its matcha is selected and finished by Wakimoto Jokoen, a fourth-generation green-tea wholesaler in Ide-cho, Kyoto. Wakimoto Jokoen has tea-judging skill ranked under the national tea appraisal dan/kyu system. Our matcha is machine-milled into an fine, uniform powder.

Powder fineness alone, however, cannot determine how matcha will work in your recipe. We encourage you to consider its fit with the milk, tools, flavor, and workflow you have in mind.

You can discuss business purchasing through our B2B inquiry page. Please inquire individually about samples, quantities, and pricing. A clear picture of the cup you want to serve is a thoughtful place to begin.

FAQ

Does a “wholesale” label mean matcha is suitable for lattes?

A wholesale label alone does not establish whether a matcha suits lattes. Test it with the milk and sweetener you will use, checking aroma, bitterness, color, and texture. The amount needed per serving and how easily your team can prepare it are also useful comparison points.

Will a recipe tested with dairy milk taste the same with plant-based milk?

Not necessarily. Sweetness, aroma, and texture vary between milk types and individual products. If you also serve oat milk, soy milk, or other alternatives, test each product you intend to use and consider whether the matcha or sweetener quantities need adjusting.

How should opened wholesale matcha be stored?

Follow your supplier’s storage instructions and stated use-by guidance first. After opening, keep matcha tightly sealed and protect it from moisture, light, heat, and surrounding odors. Recording the opening date and taking out only what is needed for service can also help organize your workflow.
