The problem

Matcha should not be a supporting act in a latte.

At home, matcha can lose its flavor and aroma in milk. Adding more powder may only make the drink bitter or chalky. This project began with that frustration.

Our goal is not to build flavor with sugar or additives, but to make a latte in which the matcha itself remains unmistakable.

Three-step method

A three-step method.

Dissolve the matcha in a little water before adding milk. It makes strength easier to control and the method easier to repeat.

STEP 01

Combine matcha and water

Use 2.5g matcha with 20–30ml water at 70–80°C.

STEP 02

Mix until smooth

Use a whisk, shaker, or spoon. With a spoon, make a smooth paste before thinning it.

STEP 03

Add your milk

Add 150–180ml dairy or plant milk. Use 150ml for a stronger cup or 180ml for a softer one.

Servings and results vary with measurements, milk, tools, and temperature. The method works for hot and iced drinks.

Reconsidering the latte through a tea merchant's eye.

Across four generations, a Kyoto tea merchant has learned to judge appearance, aroma, liquor color, and taste. We are applying that experience not only to traditional tea, but to the matcha latte enjoyed by people today.

Rather than simply placing tradition on a shelf, we test what remains when matcha meets milk. Keeping matcha from becoming a supporting act is the ICHIZEN challenge.

Does it contain sugar or milk powder?

No. The only ingredient is matcha, so you can choose your preferred milk and sweetness.

Can I make it without a bamboo whisk?

Yes. A shaker or spoon also works. With a spoon, first make a paste with a small amount of water, then gradually thin it to reduce lumps.

Can I make both hot and iced lattes?

Yes. For iced lattes, make the matcha base slightly stronger before pouring it over milk and ice.

How many servings are in one pouch?

Each pouch contains 30g. At the standard 2.5g recipe, it makes about 12 servings. The exact number varies with your preferred strength.
