How shading relates to aroma

The term is tied to the cultivation stage. When young tea shoots are protected from direct sunlight, the balance of compounds in the leaves and the way their aroma develops can change. How it differs from nearby terms

Aoka, or green aroma, is a broader word for fresh, leafy greenness and is not limited to shaded tea. Shade aroma specifically refers to a note associated with tea grown under cover. Hika, or firing aroma, comes from drying or finishing heat, so its origin is different from ooi-ka.

In matcha, shade aroma can appear in the dry powder, in the aroma that rises when hot water is added and whisked, and in the aftertaste. For practical use, pay attention to how aroma changes after opening. Moisture, oxygen, light, temperature, and odor transfer can all affect delicate notes, so matcha should be sealed well and kept in a cool, dark place.
